Polish Style Cucumbers in Brine / Ogórki Kiszone
Summer is a perfect time for pickling cucumbers which we can enjoy all year long. This is a very basic recipe for cucumbers in brine which you can enjoy in just 3 days and we call them (ogórki małosolne) low salt cucumbers. However; by letting them stay in the jars for about 2 weeks longer, you get fully pickled cucumbers in brine. This is a natural process of fermentation which allows us to get these perfectly pickled cucumbers. All my recipes are tested and I invite you to try these. Pickled cucumbers are great as an addition to meat dishes, salads, sauces or sandwiches.Stages of pickling: 1st stage: (ogórki małosolne) Low salt cucumbers.Room temperature 66 F to 70 F or 19 – 21 C takes 3 days.2nd stage: preparation for winter pickling. In the refrigerator temperature 40 F or 5 C takes 3 days. 3rd stage: Slow process of pickling.Takes 2-3 weeks to be fully pickled by placing them in the cool place like a basement for future use in the temperatures 50 F or 10 C.

Ingredients
Ingredients for a jar with capacity of 887 ml's / 30 fl. oz.
- 2 cloves garlic
- 2 flowers of dill
- fresh cucumbers as many as you can fit in a jar
- 4 pieces horseradish cut into small sticks
Brine:
- Water depending on how many cucumbers you are making.
- 1 tablespoon heaping tablespoon of salt per 1 liter of water or 30 g. (can be iodized or non-iodized)
Instructions
- Wash and dry cucumbers thoroughly.
- Boil water and salt, mix until the salt dissolves completely.
- At the bottom of well-washed and scalded jars, place cloves of garlic, a piece of peeled horseradish root, and dill flowers may use stems also.
- Place cucumbers tightly in the the jar. Make sure that the cucumbers have enough space to be covered in water.
- Pour cooled water and salt over the cucumbers, so that the water completely covers the cucumbers.
- Place lids gently on the jars and set aside in room temperature for 3 days for low salt pickles.
- After 3 days tighten lids and place in refrigerator for 3 more days. The lids will suck in and you will be able to place them in a cool place for winter use.
- You can place them in a cool place like a basement and enjoy them after 2-3 weeks and all year through. Enjoy!
