Crepes with Strawberries and Mascarpone Cheese / Naleśniki z Truskawkami i Serkiem Mascarpone
Great crepes start with ideal batter. These crapes are paper thin, fluffy and can be filled with variety of fruits, cheeses, vegetables, and meats. These strawberry crepes are delicious, perfect for breakfast, lunch and dinner. This recipe yields 16-17 crepes.

Ingredients
Batter Ingredients:
- 200 grams all purpose flour (sifted)
- 500 ml milk (I used 2%)
- 3 large eggs (or 4 small or medium ones)
- 2 tablespoons oil ( I used canola oil)
- 1 pinch salt
Filling Ingredients:
- 300 grams fresh strawberries
- 150 grams Mascarpone cheese
- 2 tablespoons granulated white sugar
- 1 teaspoon vanilla sugar or few drops of vanilla extract

Instructions for crepes:
- Place the eggs in a large mixing bowl. You can use a mixer or whisk. I prefer to use a whisk. Beat the eggs well, add salt and whisk again. Add 2 tablespoons of flour and whisk until there are no lumps. Add about 1/4 of the milk and whisk again. Repeat the process by alternating whisking the flour and the milk until all flour and milk are incorporated into the batter. At the end, add oil and whisk again, making sure there are no lumps.
- Heat up the frying pan over low medium heat and brush the remaining oil on to the pan. Usually the first crepe will stick to the bottom of the pan then the remaining ones will not stick since there is oil in the batter.
- Pour a portion using a ladle, gently making circular movements with the pan to distribute them evenly. When the surface of the batter is dry, turn it over and fry on the other side. (About 2 minutes per side). Crepes can be filled with variety of fruit, vegetables cheeses and meats.
Strawberry and cheese filling:
- Wash and dry the strawberries. Cut them into small cubes, sprinkle with about a teaspoon of granulated sugar. Mix well and place in the refrigerator for approx. 10 minutes. Strawberries contain a lot of water and we want to get rid of some water before mixing them with cheese.
- After the strawberries released some water, discard it or use it for another recipe. Then add the remaining sugar and vanilla. Mix all well. Add the cheese and mix it all well again.
- Place strawberry filling in the middle of the crepe and roll them up. Serve with strawberries over the top sprinkled with powdered sugar. They store well in the refrigerator for about 3-4 days. Enjoy!
