Potato and Cheese Dumplings / Lazy Dumplings / Kluski Leniwe z Ziemniakami
Traditional dumplings are made with potatoes, flour and eggs. Lazy dumplings are made with farmer's cheese, eggs and flour. Of course, every region has different recipes. My dumplings are a combination of both recipes. The resulting dumplings are fluffier than the classic ones. These dumplings can be served sweet with variety of fresh fruits and sour cream, with fried breadcrumbs, fried bacon, and even fried onions.Kopytka (means “little hooves”) are a kind of potato dumpling in Polish, Belarusian and Lithuanian cuisines. They are similar to Italian gnocchi and German Schupfundel. Kopytka can be either a main dish or side.

Ingredients
- 1 kg boiled potatoes (preferably baking potatoes)
- 400 grams farmer's white cheese (ground)
- 3-4 tablespoons all purpose flour
- 125 grams potato flour
- 1 egg
- 1 teaspoon salt
- 5 l water
Fried Breadcrumbs
- 4 tablespoons unsalted butter
- 2 tablespoons breadcrumbs
Instructions
- Boil potatoes until soft, about 30 minutes over medium heat. Then let them cool completely and squeeze through a potato press, if you do not have one, you can also use a meat grinder. Add the farmers cheeses and egg to the smooth potato mixture. Start adding the potato flour mix quickly to form the dough until desired consistency. Cut the ready dough into smaller pieces, with each hand roll to the thickness of the finger, coat in flour, with a sharp knife cut into diamond shapes at an angle. Pour about 5 L of water to a pot, add salt to the water. Place the dumplings in the boiling water. Cook 1/3 serving at a time, as soon as the dumplings rise to the top, give 1-2 minutes and take it out of the pot. Brown bread crumbs in butter and pour over the top of the dumplings. Serve warm. Enjoy!

I am Polish myself and my dad would make those for dinner and he would make brown gravy and put it over them. I will try this recipe. See if it is good as my dad’s.
