Perfect Crepe Batter European Style / Perfekcyjne Ciasto na Naleśniki
These crapes are paper thin, fluffy and can be filled with variety of fruits, cheeses, vegetables, and meats. These apple crepes are delicious, perfect for breakfast, lunch and dinner. This recipe will yield 16-17 crepes.

Ingredients
- 200 grams pre-sifted all purpose flour
- 500 ml milk ( I used 2%)
- 4 large eggs
- 2-3 tablespoons oil
- 1 pinch salt
Instructions
- Place the eggs in a large mixing bowl. You can use a mixer or whisk. I prefer to use a whisk. Beat the eggs well, add salt and whisk again. Add 2 tablespoons of flour and whisk until there are no lumps. Add about 1/4 of the milk and whisk again. Repeat the process by alternating whisking the flour and the milk until all flour and milk are incorporated into the batter. At the end, add oil and whisk again, making sure there are no lumps.
- Heat up the frying pan over low medium heat and brush the remaining oil on to the pan. Usually the first crepe will stick to the bottom of the pan then the remaining ones will not stick since there is oil in the batter.
- Pour a portion using a ladle, gently making circular movements with the pan to distribute them evenly. When the surface of the batter is dry, turn it over and fry on the other side. (About 2 minutes per side). Crepes can be filled with variety of fruit, vegetables cheeses and meats.
