Valentines no Bake Fruit Cheese Cake / Sernik Walentynkowy na Zimno z Owocami
Light, creamy, no bake cheesecake with strawberries, mandarin oranges and gelatin on biscuits. This cheesecake is easy and quick to prepare. Perfect for Valentines day or any other occasion. This cheesecake can be prepared with other fruits, whatever is in season.

Ingredients
- 1/2 package 1/2 package Biscotti for the bottom of the pan (about 60 g Petitki Biszkopty)
- 2 8 ounces cream cheese
- 2 8 ounces whipped cream
- 1/2 cup granulated sugar
- 1 envelope unflavored gelatin (1/4 oz)
- 1 package vanilla sugar or other flavor (Optional)
- 1/2 cup boiling water (to dissolve the unflavored gelatin)
- 1/2 pound fresh strawberries or other fruit for the top
- 1 can mandarin oranges (small)
- 1 package strawberry flavored gelatin (small) (Prepared as per package instructions)
Instructions
- Place the biscotti on the bottom of the pan. I used 2 x 10.56 x 10.65 inches spring form pan. Place about a teaspoon of mandarin orange juice/syrup on each biscotti so that they are moistened and to prevent them from rising to the top once the mixture is poured over. I used mandarin orange syrup from the mandarin orange can that I have used to decorate the top.
- Mix the cheese cream with sugar and vanilla sugar until a uniform consistency forms. Then start adding portions of whipped cream slowly and mixing consistently. Bring to boil the 1/2 cup of water and stir in the unflavored gelatin until the lumps are gone. Pour the cooled gelatin into the mixture and stir again until all incorporated.
- Pour half of the mixture over the biscotti.
- Place the mandarin oranges on the cheese mixture.
- When all done pour the remaining mixture over the mandarin oranges. Now chill in the refrigerator at least 4 hours, preferably over night.
- Once all is set decorate with strawberries, or your favorite fruits.
- Once your strawberry flavored gelatin is cooled, you may pour it over the fruit by using a ladle. I do mine by placing 1-2 ladles of gelatin at a time and not all at once, about 3 times. It allows the fruit to stay in place instead of rising to the top. Chill again until the gelatin sets. Enjoy!
