Crepes with Apples / Naleśniki z Jabłkami
These apple crepes are delicious, perfect for breakfast, lunch and dinner. This is one of those dishes that hardly anyone dislikes. They are made from the best pancake recipe (easy to fry, soft inside and slightly crunchy on the edges) and delicious fried apples seasoned with cinnamon and vanilla.

Ingredients
INGREDIENTS: (for about 15 pieces of crepes batter)
- 260 grams all purpose flour (pre-sifted)
- 3 medium eggs
- 500 milliliters milk
- 250 milliliters warm water
- 50 grams olive oil (may substitute with preferred oil)
- 1/2 teaspoon salt (optional)
INGREDIENTS: (For apple filling)
- 4-5 large apples
- 2-3 tablespoons granulated sugar (depending on sweetness of apples)
- 1 tablespoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons powdered sugar (for sprinkling)
Instructions
DIRECTIONS: (For crepes)
- Place eggs, salt and about 1/4 of the milk in a large bowl.
- Add portions of flour slowly by using a whisk. You may use a mixer, that is just my preference.
- Keep adding the flour and the milk alternating with the water until a smooth, thin batter is created (no lumps!).
- Finally add the oil and mix again.
- Let it rest for at least 30 minutes Until the batter thickens slightly.
- Preheat your pan over medium heat, mix the batter thoroughly, pour a portion using a ladle, gently making circular movements with the pan to distribute them evenly.
- When the surface of the batter is dry, turn it over and fry on the other side.
Directions for apple filling
- Peel and cut the apples into thin slices. Place the sliced apples in a saucepan add sugar, vanilla and cinnamon, sauté over low heat until apples are soft.
- Place apples in the middle of the crepe and roll them up.
- Serve with the remaining apples over the top sprinkled with powdered sugar.
- They store well in the refrigerator for about 3-4 days.
