Classic Beef Meatloaf / Pieczeń z Mięsa Wołowego Mielonego
My great homemade meatloaf recipe is tender and juicy on the inside with a sweet and tangy topping. This is a traditional Polish meatloaf made with ground beef, breadcrumbs, onions, and perfectly balanced seasonings as my mother used to make. The ketchup and barbecue sauce topping add incredible flavor.

Ingredients
- 2 pounds ground beef (I used 90% lean)
- 1 yellow medium onion (finely chopped and sautéed)
- 1/4 cup red bell pepper (finely chopped)
- 3 cloves garlic (minced)
- 2 large eggs
- 3 tablespoons fresh parsley (finely chopped, optional)
- 1 cup Panko breadcrumbs (Italian seasoned)
- 1/2 cup milk
- 1, 1/2 teaspoon salt (to taste)
- 1/4 teaspoon ground black pepper
- 2-3 tablespoons ketchup (optional)
- 1/2 teaspoon ground red paprika
- 2 tablespoon olive oil or butter (to sauté the onion)
Meatloaf Sauce Ingredients:
- 1/2 cup ketchup
- 1/2 cup original barbecue sauce
- 2 tablespoons brown sugar
- 1 pinch salt (to taste)
- 1 pinch ground black pepper (to taste)
Instructions
- Preheat oven to 350°F. In a large bowl, add all of the ingredients for the meatloaf.
- Mix well to combine.
- Form in to a loaf by gently pressing meat down and shape evenly. You may use a loaf pan. The loaf becomes crispier on the outside when in a bigger baking pan rather then a loaf pan.
- Bake meatloaf at 350˚F for about 40 minutes. Oven temperatures may vary.
- In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 20 minutes. Rest meatloaf 20 minutes before slicing. Enjoy!
- Next day, you can cut the meatloaf into thin slices and make sandwiches from the left overs. If you are lucky to have left overs. They taste great!
- Meatloaf can be stored in the fridge for up to 3 days.
