Sponge Cake with Plums / Ucierane Ciasto ze Sliwkami
I like such cakes the most, I have to admit. Simple, quick and with a small amount of ingredients come out best every time, even if it is your first homemade cake. It is important that the ingredients are at room temperature, so just a few hours ahead get the butter and eggs out of the refrigerator.

Ingredients
- 1.5 stick Butter
- 3/4 cup Sugar
- 5 Large eggs (separate egg yolks and whites)
- 2 cups All purpose flour
- 1 tbs. Sour cream
- 2 tsp. Baking powder
- 1 lb. Plums
- 1 tsp. Vanilla sugar (optional)
- 1/4 cup Powdered Sugar to sprinkle on top (optional)
Instructions
- Wash the plums and leave to dry completely. After they are dried cut in to halves or slices depending on the size.
- Mix the butter with sugar and vanilla sugar to form a smooth mass.
- Add egg yolks and sour cream and continue to mix on low speed. Add sifted flour and baking powder and mix thoroughly.
- Beat the egg whites until stiff and add at the very end.
- Mix gently to get a uniform consistency.
- Pour the dough into a baking pan. I used 10 x 10 inches square glass pan.
- Add the plums on top, it doesn’t have to be very thorough and even.
- Bake at 300 F for about 60-90 minutes. Oven temperatures vary and you know your oven best. Bake until the dough rises nicely, it will be golden brown and the tooth pick should be dry when inserted in the middle. Cool and sprinkle lightly with powdered sugar. Enjoy.
