Potato Cake with Smoked Pork Bacon / Babka Ziemniaczana na Karkowce

A perfect potato cake with smoked bacon, it fits perfectly as a dinner dish, can be served with any salad.

Ingredients

  • 2 kg baking potatoes
  • 2 yellow onions
  • 2-3 eggs
  • 400 g smoked pork butt
  • 3 tbsp all purpose flour
  • 3 cloves crushed garlic
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Peel the potatoes, then grate them and the onion on a fine grater (as for potato pancakes).
  • Dice the smoked pork butt into small cubes and fry it in a pan.
  • Pour the water from the grated potatoes (I tilt the bowl with the potatoes, covering it with a lid, and pour it out like boiled potatoes. If there is too much water, you will need to add a little more flour.
  • Add flour, eggs and spices to the potato batter.
  • Add fried smoked pork butt in to the batter and mix well.
  • Place the batter into to a baking tray. I used a 22 cm x 33 cm glass pan sprayed with cooking spray.
  • Bake at 350 degrees F for about 60 minutes until golden brown.
  • Serve warm with sour cream or yogurt.
