Baked Baby Back Pork Ribs with Peppers and Onions / Zeberka Wieprzowe Pieczone w Piekarniku

This is an amazing recipe for baked ribs that are so moist and do not require any barbecue sauce. I served them with mashed potatoes and fried cabbage with carrots. But they go well with almost any salad and potatoes. You can also baked these in the grill. This makes a very colorful and delicious dish.

Ingredients

  • 2 slabs lean pork baby back ribs (about 3,175 grams or 7 lbs.)
  • 1 red onion (200 grams)
  • 1 yellow onion (200 grams)
  • 1 white onion (200 grams)
  • 1 red bell pepper (100 grams)
  • 1 yellow bell pepper (100 grams)
  • 1 orange bell pepper (100 grams)
  • 5 cloves garlic (chopped or minced)
  • 1 tbsp salt (or to taste)
  • 1/2 teaspoon ground black pepper (or to taste)
  • 1/2 stick butter (may substitute for oil)

Instructions

  • Wash ribs well and let dry.
  • Peel all onions and cut in to feathers or as you prefer.
  • Wash and cut all peppers to lengthwise strips.
  • Peel garlic and chop or mince.
  • Season both slabs of ribs with salt and pepper. Place 1 slab of ribs on foil, on top of the rib place some minced garlic, red onion, yellow onion, white onion, red bell pepper, yellow bell pepper and orange bell pepper. Cover with the second slab of rib and continue placing vegetables in the same order.
  • Place sliced butter on the top. Add salt and pepper over the top.
  • Cover tightly with aluminum foil and bake for about 2.5-3 hours at 350 F. Oven temperatures may very. You may bake in the grill as well.
