Shortcrust Pastry with Black Cherries and Meringue / Kruchy Placek z Czeresniami i Bezową Pianką
Perfect summer desert while fresh cherries are still available. Shortcrust meringue cake and juicy cherries. Very easy recipe and comes out every time.

Ingredients
- 400 g all purpose flour (pre-sifted)
- 200 g sweet butter
- 100 g powdered sugar
- 4 egg yolks
- 1 tbsp sour cream
- 1.5 tsp baking powder
- 1 vanilla sugar
- 1 pinch salt (optional)
Filling
- 1 kg fresh cherries
- 2 tbsp powdered sugar
- 1 tbsp potato flour
Maringue
- 4 egg whites
- 150 g sugar
- 1 tsp potato flour
Instructions
- Place the ingredients for the dough into a bowl and knead quickly.
- Divide the dough into two pieces in the proportion of 1/3 and 2/3. Wrap them in plastic bag or foil and put them in the refrigerator to cool for about 30 minutes.
- Roll out majority of the dough between two sheets of parchment paper, then remove the top sheet first and turn the cake upside down and place it into the previously prepared form. I used a glass form 24 x 30 cm. Place the form with the dough in a preheated oven at 320 F for about 20 minutes until slightly golden brown.
- Mix the washed and pitted cherries with powdered sugar and potato flour, then place on the top of baked dough.
- Beat the egg whites until stiff. Then, gradually adding sugar, beat all the time, just at the end add a teaspoon of potato flour. Place the meringue over the cherries.
- Over the top, grate the smaller part of the dough and place in a preheated oven at 320 F and bake for about 45-50 minutes until the top is golden brown.
