Polish Yeast Apple Pancakes / Racuchy Drozdzowe z Jablkami

Apple pancakes are plump and soft inside. They are delicious and quickly disappear from plates when prepared this way. They can be served with powdered sugar. They taste best hot, but after a slight cool down they are also delicious.

Ingredients

  • 250 g all purpose flour
  • 250 ml milk (slightly warm)
  • 25 g fresh yeast
  • 1 egg
  • 1 tbsp sugar
  • 1 package vanilla sugar ( 9 g)
  • 3 apples
  • 1 oil for frying
  • 1 tbsp powdered sugar for sprinkling (optional)

Instructions

  • In a bowl mix crushed yeast with sugar, slightly warm milk and about 50 g of flour. Cover with a cloth and set aside in a warm place for about 10-15 minutes to rise.
  • Pour the rest of the flour into the bowl. Add vanilla sugar, egg and the risen batter. Knead the dough preferably with a mixer. Cover with a cloth and set aside in a warm place for about 30-40 minutes, until the dough doubles its volume.
  • Peel the apples and cut into small cubes. Add to the dough and mix.
  • Heat oil in a pan. Form medium sized pancakes. Fry over medium heat on both sides until golden brown.
  • Place fried pancakes on a plate and sprinkle with powdered sugar. Serve immediately, preferably warm. Enjoy!
