Pierogi with Strawberries / Pierogi z Truskawkami

A recipe for delicious dumplings with strawberries from the best dumpling dough. You can use whole strawberries, smaller or larger or just cut into small pieces. Before making dumplings, strawberries can be sprinkled with sugar and/or vanilla and mixed. Frozen strawberries can be used out of season.

Ingredients

  • 500 g all purpose flour (sifted)
  • 50 g butter
  • 1 egg
  • 250 ml water (boiled and cooled)
  • 1 pinch salt
  • 500 g strawberries

Instructions

  • Place sifted flour into a large bowl. Place egg, melted and cooled butter into the bowl. 
  • Add a pinch of salt and pour in water.  I use boiled and cooled water.
  • First mix everything together and then combine into a uniform dough and knead the dough with hands. 
  • Form a ball of dough and wrap it in a plastic bag. Place the dough in the fridge for about 30 minutes to rest which will also prevent it from shrinking during rolling.
  • Wash fresh strawberries under cold running water and remove stalks. Dry the strawberries gently with a paper towel. Cut them into smaller pieces. The smaller you plan to make pierogi, the smaller pieces you will need. It will be easier to seal them in dumplings.
  •  Divide the dough into three parts. Cover the two parts with a slightly damp cloth. Roll out the dough thinly on the board, add flour to prevent it from sticking to the board. Cut circles and stretch them out with your hands.  
  • Place the strawberry stuffing on the inside. One dumpling should fit a full teaspoon of strawberries. Fold the dumplings in half and seal the sides. 
  • Place the finished dumplings on a board sprinkled with flour or on a parchment paper to prevent from sticking.
  • Place each series, about 15 pieces at a time, in a large pot with salted, boiling water. After about a minute, the dumplings with strawberries will rise to the surface. Remove dumplings about 4 minutes after they surfaced to the top. Can add yogurt or sour cream mixed with sugar and/or vanilla sugar. Enjoy!
