Broccoli Soup with Cheddar cheese / Zupa Brokulowa z Serem Cheddar

A delicate, very simple and delicious broccoli soup cooked on a light chicken broth with Cheddar cheese.

Ingredients

  • 2 cups broccoli florets (chopped)
  • 1 grated carrot (small)
  • 1 chopped onion (small)
  • 1 celery stalk (sliced thin)
  • 2 cups sharp Cheddar cheese (shredded)
  • 2 cups chicken broth or stock
  • 2 cups milk
  • 2 tbsp all purpose flour
  • 1/4 cup oil (mail use butter or vegetable spread)
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions

  • Saute onion in one tbsp of oil and let cool. In another pot whisk the remaining oil and flour together over low heat by adding few tablespoons of milk until flour loses the granular texture.
  • While whisking constantly, add milk slowly into the mixture. When finished adding milk, add the chicken broth or stock in to the mixture. Simmer over low heat until the soup becomes thicker about 15 minutes. Add the remaining vegetables and simmer until tender. At the end add Cheddar cheese into the soup, stirring constantly until cheese is melted. Add salt and pepper to taste. Enjoy.
