Tomato Soup with Noodles/ Zupa Pomidorowa z Makaronem
There’s really nothing more comforting than a steaming hot bowl of tomato soup any day. You can use rice as well as any pasta, although in my opinion the elbows, shells, or bows are the best.

Ingredients
- 2 L water
- 250 g pasta
- 1-2 carrots (medium)
- 1 parsley root (small)
- 1/4 piece celery root
- 1 onion (medium)
- 1 clove garlic
- 1 tbsp butter
- 4 tbsp tomato paste
- 2 tbsp sour cream (or may use 1/2 cup half and half)
- 1 stock or vegetable cube (optional)
- 1 sugar to taste
- 1 lemon juice to taste
- 1 salt to taste
- 1 pepper to taste
- 1 parsley leaves for decoration (optional)
Instructions
- Wash and peel the vegetables. Grate carrots, celery and parsley. Place the vegetables in a pot with 2 L of water. Bring to boil, add the stock or vegetable cube (optional). Chop the onion and garlic finely, fry in butter, add to the broth. Simmer the soup on low heat until the vegetables are soft. Add pasta and salt and pepper to taste. Bring to boil and simmer over low heat until pasta is tender.
- Stir in the concentrate and mix well. If necessary, add some more concentrate. Mix sour cream with a few tablespoons of hot soup. Pour into the soup, stir and bring to boil. Season the soup to taste again with salt, pepper, sugar and lemon juice. You may boil the pasta separately and pour the soup over the pasta. May decorate with chopped parsley. Serve warm. Smacznego!
