Kolaczki

There is definitely a lot of  debate as to who invented kolaczki or where they originated from. The Polish claim it but so do the Slovaks, Croatians, Czechs and others. I don’t remember eating them as a child growing up or while living in Poland. I was first introduced to Kolaczki by my Polish/American friend who shared this great recipe with me. I have started making them ever since and the entire family loves them. Kolaczki can be round like a thumb-print style, square or diamond- shaped, or like the traditional crescent filled.

Ingredients

  • 300 g All-purpose flour
  • 226 g Cream chesse (8 oz)
  • 226.8 g Butter 2 sticks
  • 1 small package Vanilla sugar (or vanilla extract)
  • 1/4 Cup Powdered sugar
  • 1 can Pie filling (Any flavor)

Instructions

  • All ingredients should be room temperature.
  • Mix the butter with the cream cheese to form a uniform consistency. Add vanilla sugar and mix all well again. Transfer the dough into the pastry board and start adding sifted flour and knead the dough until it no longer sticks in to your hands. (Or you may use a mixer). Divide the dough in to 4 equal parts, wrap each part in a saran wrap and refrigerate for at least 30 minutes. Roll the dough in to approximately 0.5 cm and cut about 6 x 6 cm squares or any other shape as mentioned above. Place about 1/2 teaspoon marmalade / pie filling in the center and stick the corners together. Transfer in to a cookie sheet lined with parchment paper. Bake at about 350 F in a preheated oven for about 15 to 20 minutes to a slightly golden color. Oven temperatures may vary. Let them cool and lightly sprinkle with powdered sugar. Enjoy!

    Very good recipe. I tried it out since my grandma used to make them. Definitely brings memories from my youth.
