15 Bean Soup / Zupa z 15 rodzajow Grochu
This is the soup that makes you feel good about your health and is still very delicious and filling. Beans are full of fiber, protein, and antioxidants, while still being super inexpensive and shelf stable. Getting 15 different varieties of beans all in one pot, is super healthy. It's a soup mix of 15 bean with all different colors, patterns, and sizes. Excellent comfort food for those long autumn evenings.

Ingredients
- 20 oz bag of 15 bean soup mix
- 1 yellow onion (diced)
- 2 lbs pork smoked butt (cut into cubes)
- 2-3 cloves garlic (minced)
- 1 tbs oil
- 1 tsp salt
- 1 pinch black pepper
- 1 tbsp dried parsley leaves
- 1 tbsp dried rosemary
- 2-3 bay leaves
- 3-4 grains all spice
- 1 can crushed tomatoes
- 8 cups vegetable broth or water
Instructions
- Rinse beans well and pour into a large bowl, cover with water, and soak overnight (or for at least 8 hours).
- After this time drain water from beans and rinse well again.
- Heat oil in large pan and add diced smoked pork butt, onions and garlic. Season with salt and pepper. Sauté until softened, and onion is translucent, about 5 minutes.
- Add rosemary, parsley, allspice, and bay leaves. Stir to combine. Add beans and broth/water and crushed tomatoes. You can add more later if it gets too thick. Bring to a boil, reduce heat, and simmer for about 2 hours or until beans are tender.
- Taste, adjust seasonings as desired and serve! I did not use the seasoning that came with the beans.
- You can freeze the soup for up to 6 months. Enjoy and Smacznego!
